LEMON TART

Ingredients :

1 Empire Sweet Shortcrust Tart Shell

2 Eggs

50ml thick cream

90g castor sugar

2 lemons juice and zest

Method :

Step 1: Blind bake sweet shortcrust tart shell.

Step 2: Whisk eggs and sugar, add cream, lemon juice and zest. Mix together with a spoon to get rid of any bubbles.

Step 3: Pour into prepared tart shell.

Step 4: Bake for 20-25 mins or until just set.

Step 5: Cool and dust with icing sugar.

Step 6: Serve with fresh berries and passionfruit.
