blueberry, almond tart
Ingredients :
1 x Empire Pastry Vanilla Bean Pastry Flan, blind baked
85g Softened Butter
175g Caster Sugar
145g Almond Meal
30g Self Raising Flour
2 Eggs
2 x 125g punnet blueberries
1 Tbsp Orange Liquor
1 Tsp Vanilla (Paste or Extract)
1 Tbsp Flaked Almonds
method:
Step 1: Pre-heat oven to 180°C.
Step 2: Cream butter and sugar until pale and fluffy.
Step 3: Beat in one egg at a time until just combined.
Step 4: Add Vanilla and Orange Liquor if using.
Step 5: Stir in Almond Meal, followed by self-raising flour, until combined.
Step 6: Mix in one of the blueberry punnets.
Step 7: Spread mix into the blind baked tart shell, top with remaining berries and sprinkle over almonds.
Step 8: Bake for 35 minutes or until browned and set.
Leave to cool at room temperature before cutting. Service with icing sugar, cream or ice-cream.
